Mint lemonade, spiked or not!

If you grow mint you know it can take over acres in a blink of time, I love cutting fat fistfuls and putting it to delicious work for me! 


This is a non recipe, I have lemon trees and have 1000s of lemons ripen in winter, I just picked my last 2 dozen fresh lemons on the summer solstice, just as the weather should begin getting way too hot and not a fresh lemon in sight! I juice and freeze 1 1/2 cups of lemon juice in baggies all winter long. 


To make my simple no sugar lemonade I take water and fresh mint and whirl in the blender. I then pour through a strainer and add lemon juice, sugar free substitute and swirl in blender again, adjusting the sweetness to taste. By using the fresh mint you will see how little sugar substitute you need. Enjoy over ice, with or without vodka. 




My basic recipe 
2 C water
4 8" stems of mint
Whirl and strain

Add
1 1/2 C lemon juice
4 sweetener substitute packets
Whirl

Add
Water to top of blender

I double the recipe to fill my pitcher for about 8 cups, it is too large for a blender, make in two batches.

Serve with 
Ice
Mint stems
Lemon slice
Straw
Vodka
