tuscan salmon redo


I have made this before, but this time I omitted the wine and loved it even more!

Tuscan salmon

2 salmon fillets
olive oil
2 T butter
2 T chopped garlic
yellow onion
1/2 c sundried tomatoes
1 c heavy cream
several fistfuls of fresh spinach
1/2 c parmesan
fresh parsley

heat oil, season salmon with s&p and cook 5' per side, remove from pan
add butter and sauté garlic and onion

add tomatoes and cook for a minute or two

add cream and simmer, add spinach, stirring until wilted, add parmesan
return fish and spoon sauce over fish

top with fresh parsley

enjoy, its delish!
