tuscan salmon

 
Tuscan salmon
 
salmon
olive oil
s&p
 
sear in hot oil, 5' per side
remove and set aside
 
 
in pan drippings melt and sauté
 
2 T butter
5 T garlic
small onion
 
add
handful of sundried tomatoes and fry for 2'
1 cup white wine
 
 
simmer and reduce sauce
add 1 3/4 c cream
season to taste
 
add
 
3 cups spinach, stir until wilted
1/2 c parmesan
 
simmer until well blended
 
add fish back in sauce
top with chopped parsley
 
 
 
 
my husband calls this fish candy~
