tuscan salmon

 
Tuscan salmon
 
salmon
olive oil
s&p
 
sear in hot oil, 5' per side
remove and set aside
 
 
in pan drippings melt and sauté
 
2 T butter
5 T garlic
small onion
 
add
handful of sundried tomatoes and fry for 2'
1 cup white wine
 
 
simmer and reduce sauce
add 1 3/4 c cream
season to taste
 
add
 
3 cups spinach, stir until wilted
1/2 c parmesan
 
simmer until well blended
 
add fish back in sauce
top with chopped parsley
 
 
 
 
my husband calls this fish candy~

tiramisu cheesecake

hands down my new favorite decadent dessert...

 tiramisu cheesecake

preheat oven to 325
use 9" spring form pan

 crust
1 1/4 c of crushed vanilla wafers
1/4 melted butter
2 T sugar

mix and press in pan, bake for 10', let cool

filling

lady fingers
1 c Kahlua
1/4 c expresso, I used starbucks double shot

dip the lady fingers in the above mixture and arrange over over crust, drizzle any remaining liquid over lady fingers

combine

8 oz cream cheese
16 oz mascarpone
1/4 c sugar
mix at low speed

in separate bowl whip together
1 c whipping cream
1/2 c powder sugar
2 T vanilla

combine mascarpone mixture with whip cream
fold in 1/4 c Kahlua
spread over the the lady fingers
refrigerate until set

decorate with
whip cream
chocolate covered coffee beans
cocoa powder

chicken piccata

 
thin sliced chicken breasts
flour
s&p
 
coat chicken with above mixture in a baggie
sauté in olive oil until golden
remove from pan
 
add
T butter
T olive oil
sauté
 garlic
artichoke hearts
 
add
c of white wine
1/2 c chicken stock
simmer until reduced by half
 
add
olives
capers
juice of one lemon
 
add chicken back in and simmer 2'
sprinkle with fresh parsley
