Lemon goat cheese tea cookies













For the Cookie Dough

4 ounces goat cheese, room temperature
1 stick butter, room temperature
½ cup  sugar
2 T lemon zest
1 T lemon juice
2 cups + 2T flour

For the Glaze
2 ounces goat cheese, room temperature
2 T lemon juice
1 ½ cups powdered sugar
lemon zest, for garnish

Prep: bake at 350°
30 minutes before set out the goat cheese and butter to come to room temperature.

For the Cookies: 
Cream together the goat cheese, butter, and sugar
lemon juice and lemon zest 
flour 
Roll dough into T portions, flatten the balls just slightly so the bottoms are flattened.
freeze for 5 minutes' 
Bake 14-16' until very lightly browned on the bottom

GLAZE
Beat goat cheese and lemon juice until smooth.
Add powdered sugar 
lemon zest to top
Store cookies airtight container up to 1 week.

Lemon chocolate truffles








LEMON CHOCOLATE TRUFFLES

2 bags of chocolate chips, sugar free or not
 1/2 c whipping cream
2 T lemon zest

Pour bag of chocolate chips in microwave safe bowl.
Heat whipping cream until almost boiling and pour over chips, stir with spatula.
Add zest at end. Place in fridge to set an hour.

Using small scoop form small rounds and 
place on silpat cookie sheet. Freeze for 15'

Melt second bag of chips in microwave at 30 second intervals with spatula.
Drop balls in chocolate to coat with forks and return to mat, sprinkle with zest. 
Store in fridge or freezer.
