Small batch fig jam
2 C chopped figs
3/4 sugar
T lemon juice
T balsamic vinegar
Bring to boil stirring
I used blender stick to remove chunks
Cover and drop to simmer stirring occasionally
Cook for 25-30'
Test jam on cold plate
Drop spoonful and drag spoon back
If jam doesn't run back its ready
Gel stage is 220°
