thank you terry!


i have been on the receiving end of some gorgeous cucumbers, great big things, if all stretched out end to end surely must be a few yards of green. feeling a bit behind with my stash i tried a new recipe, all i can say is bring on the cucs, this was THE most refreshing drink on a hot summers day that you will ever imagine! 


 cucumber, mint and lime aguafresca

couple of fresh cucumbers
freshly squeezed lime juice (around 10-12)
fist full of ginger mint
your choice of sweetener 
water and ice


cut ends off cucumbers, slice into chunks and put in blender. add lime juice. add the stripped leaves off the mint stems. add enough water to to puree. strain away the solids by pressing with a spatula, add water and adjust sweetness to taste with your choice of sugar or a sugar free product. load a pitcher up with ice, pour over and top with more water.
