nectarine tart with meyer lemon caramel sauce









nectarine tart

puff pastry sheet
3 nectarines
cinnamon sugar
milk or egg for brushing to brown the edges

honey or jam to glaze for a sheen
OR skip that and just drizzle meyer lemon salted caramel sauce over warm pastry with a dollop of
fresh whip cream


score pastry 1" around the edge, paint with milk and dust with cinnamon sugar, bake at 400 for 10 minutes
slice 3 riped to perfection sweet nectarines and spread inside the puff pastry
sprinkle with more cinnamon sugar and bake for 10 minutes

serve warm with meyers salted caramel sauce, remember this recipe is ALL ABOUT THE SAUCE!
add fresh whip cream and be prepared to lick the plate when no one is watching, you won't want to miss one juicy buttery drop~

Meyer Lemon Caramel Sauce

Ingredients

  • 2/3 cup sugar
  • 1/4 cup water
  • 1/4 cup fresh Meyer Lemon juice
  • 1/2 teaspoon grated Meyer Lemon zest
  • 1/4 cup cream
  • 2 tablespoons butter

Directions

Combine sugar and 1/4 cup water in heavy small saucepan. Stir over medium-low heat until sugar dissolves. Increase heat and boil without stirring until deep amber color, occasionally brushing down pan sides with wet pastry brush and swirling pan, about 8 minutes.
Carefully add lemon juice, zest, cream and butter (mixture will bubble vigorously). Stir over low heat until smooth and any caramel bits dissolve. Cool completely.
Sauce be prepared 1 day ahead. Cover and let stand at room temperature.

    Had a Normandy crepe at lunch yesterday at our favorite local French bistro. Very authentic!
