fig ice cream with lemon and ginger
20 figs
½ cup of water
lemon zest
¾ cup of sugar
1 cup of heavy cream
fresh ginger to taste
freshly squeezed lemon juice to taste
chop figs and simmer in water with zest. add sugar and ginger, reduce to jam like consistency. cool, then add cream and juice to taste and put in ice cream maker.
