Strawberry Cake
400° for 50'
9" spring form pan
1 C sugar
1/2 C oil
2 eggs
Lemon zest
1/4 C lemon juice
1 C yogurt
1 t vanilla
Whisk wet for 1 minute
Add
2 1/4 C flour
4 t baking powder
Dice 1 C strawberries
Slice 2 C for topping
Pour half into cake pan, scatter diced berries, top remaining batter and berries. Bake until skewer comes out clean.
Dust with powder sugar, icing or whip cream.
