cut fresh olives
nick their skin and soak in fresh water
change water every day for 3-5 days

brine in jar with 1/2 rock salt with 2 cups water
leave jar top loose
Shake jars daily
Jan 5th
new brine mix
Jan 12th
new brine mix
Jan 16th
DONE!
Seal in jars with
3T salt
1/c vinegar
1 1/2 c water
fresh rosemary
top with olive oil
store in pantry 6 months
once open eat in a month
