orange and fennel halibut~


halibut steaks

2 T orange marmalade
2 T blood orange juice
T apple cider vinegar
olive oil
paprika
s&p

mix together and brush on halibut, bake at 400 for 15' until cooked.

mix remaining sauce in with sliced orange and fennel, spoon over fish and sprinkle with fresh tarragon.

So beautiful and healthy too, I love the flavor of fennel. We had best halibut when we were on your side of the country, in Vancouver & Seattle. It's so dang pricey here, it's a treat!

This fish looks delicious, Jain! I haven't seen halibut in the grocery lately but I'm going to find some and try this, or I'll make the sauce for some cod. Sounds wonderful and looks beautiful too! Linda
