Toffee brittle
1 cup butter
1 cup sugar
1 teaspoon pure vanilla
2¼ cups roasted sea salt peanuts
1 bag semi-sweet chocolate chips
Line cookie sheet and spread 2 C of peanuts
Melt butter, sugar and vanilla, let come to simmer for 7-8'
When shade of caramel and flows from spoon in ribbon pour over peanuts.
Pour bag of chocolate chips over let sit 2-3' to melt.
Using offset spatula spread chocolate, top with chopped nuts
Chill and chop!
