toad in a hole~

oh this was a fun recipe! this is why i love the novel bakers, it forces me out of my comfort zone, to try new things and really bring a book, or in this case, an honest to goodness cookbook, to life! i loved my week trying new recipes, but this one thrilled me to no end, it was like a volcano straight out my oven, i was mesmerised by the swirling steam. ok, to be honest, i was afraid to even try and eat it!

the salad which she paired with this could not be a greater contradiction, the toad is warm and savory, the salad tart and crisp, it was a bit too shocking for me. if per chance you try your own toad in the hole, next time i will slice my onion into intact quarters, i love roasted onions but mine was not fully cooked all the way through.

thanks for joining the novel bakers this week as we shared home made winter. i still have a couple more recipes to share thru sunday, i like to immerse myself in 7 full days of playing with new recipes~

pear cardamon cake~

Cardamom Cake with Whole Pears & White Chocolate
1 loaf cake (8-10 servings)

Ingredients

For the Pears:
3 medium-sized crisp, Bosc pears, peeled but whole, with the stem left on (Bosc pears hold their shape with the poaching and baking time, I could only find large ones)
1 (750-ml) bottle dry white wine
1 1/4 cups sugar
4 cloves
3 star anise pods
8 cardamom pods
2 cinnamon sticks

strain and reduce liquid for sauce with cake, or check out marys new cocktail~

For the Cake:
14 tablespoons butter softened
1 cup sugar
4 eggs
1 1/2 cups self-rising flour (If you don’t have self-rising flour, sift/whisk together 2 1/4 teaspoons baking powder with 3/4 teaspoon salt for 1 1/2 all purpose flour. There is a handy conversion calculator here.)
1 generous tbsp ground cardamom
pinch of salt

And further:
*3 oz white chocolate, in chunks
